fruit Cordial

Superb cordial that is very easy to make and better flavoured than the most expensive cordial brands you can buy.

Various combinations of fruit cordial.
Ingredients
  • 1.75 kg sugar.
  • 12 to 15 citrus fruit (lemon, orange, tangelo, grapefruit etc..) in any combination.
  • 30 g citric acid.
  • 30 g tartaric acid
  • About 2.5 litres of water.

  1. Grate rind from the fruit. You should end up with 1/4 to 1/3 of a cup of rind.
  2. Squeeze the juice from the fruit.
  3. Measure the amount of juice you have squeezed and add water until you have a total of 2.5 litres of liquid.
  4. Combine the liquid with the rest of the ingredients in a large pot and bring to the boil.  Stir mixture as you do this until the sugar has fully dissolved.
  5. Bottle immediately in sterilised bottles and cap the bottles.

This is not a hard and fast recipe so feel free to experiment with the levels of water, fruit, acids etc...  What is important is to add citric and tartaric acids in some form as fruit cordials made without them seem to me to be not nearly as good.

If I am making cordial using just oranges I usually use more oranges.  This is because they do not have as strong a flavour as lemons or grapefruit.


As well as making cordial I also use it as a syrup base for making soft drink using a SodaStream machine.
